The conditions that must be used in industrial applications of enzyme systems are generally quite different from those in which they are analyzed through basic biochemical studies.
However, although a series of compromises must be reached for technical and economic reasons and in order for these processes to be controlled by factors other than those found with pure enzyme substrates in dilute solutions, it is necessary to have a precise biochemical knowledge of the polysaccharolytic systems involved.
